Chives
Edible, Beautiful, and Hardy
Chives are the perfect crossover plant—equally at home in the vegetable garden or the flower border. They form neat clumps of grass-like, onion-scented leaves that are delicious in salads and potatoes. In late spring, they are topped with adorable, globe-shaped purple flowers that are also edible (and bees love them!).
Why You Need It:
- Kitchen Staple: Harvest fresh herbs right outside your back door.
- Pest Repellent: Their onion scent helps deter aphids and Japanese beetles from nearby plants.
- Tough: Cold-hardy and comes back reliably every single year.
Planting Tips:
Plant in Full Sun. They are incredibly easy to grow. To keep the foliage tender for eating, cut the flower heads off after they fade so the plant focuses energy on leaves.
