Lamb's Ear (Stachys byzantina) is named perfectly: its thick, silver-gray leaves are covered in soft fuzz that feels exactly like a lamb's ear. Children (and adults!) can't resist touching it. It forms a dense, low-growing mat of silver foliage that provides excellent contrast to green plants.
